Southwest Salad Recipe with Spicy Honey Mustard
The warm weather is finally here! (Knock on wood! Please, don't leave again!) I like to switch things up in the kitchen a bit once the warm weather hits. I love cooking, but when the weather is nice, I would much rather be outside playing with my kids than stuck over a stove for hours. For instance, mashed potatoes take a hiatus during Spring and Summer, and are replaced with yummy, easy Alexia Sweet Potato Fries and Onion Rings.
Now, don't fret. I'm not compromising quality or nutrition for my family during the summer, just the time it takes to get there! Alexia products are made with high quality ingredients, they're super simple to make, and I can just pick them up in the frozen food section on my bi-weekly grocery shopping trip to Walmart. I also love the fact thatit's so easy to spice things up by cooking thedifferent flavors of fries, such as Sweet and Spicy or Sea Salt, or onion rings, making different sauces to serve them with (or seriously, just pour the sauce right on those bad boys! Yum!), or even using them as delicious and filling toppings to your favorite dishes.
A perfect example? This totally delicious Southwest Salad Recipe with Spicy Honey Mustard dressing! We've got three different types of lettuce, corn, black beans, carrots, and cheese, topped with Alexia Onion Rings, and drizzled with a spicy, tangy, homemade honey mustard dressing. Is your mouth watering? Mine is! Want to know the best part? It's ridiculously EASY to put together for a nutritious lunch or dinner!
To make the Spicy Honey Mustard, combine mayo, honey, mustard, vinegar, and a little juice from jarred jalapenos, and whisk until it's smooth and creamy.
Then add your cayenne and finely chopped jalapenos to the mix, and just stir to combine. Cover your yummy Spicy Honey Mustard dressing and pop it in the fridge. It's super tasty if you decide to eat it right away, but I like to chill it for at least an hour before serving to really give the flavors a chance to meld together into even more yummy-ness.
Now we need to bake the Alexia Onion Rings according to package instructions. While we're waiting for those to bake, add your chopped lettuce, carrots, corn, black beans, and cheese to a large salad bowl and toss to combine.
When your onion rings are cooled, place your salad mixture onto individual serving plates. Top the salad with your warm, but not hot, onion rings, and drizzle the spicy honey mustard dressing over the whole thing.
You should also probably bake up some sweet potato fries because they are amazing dipped in the spicy honey mustard! I especially loved the extra kick fromthe Sweet and Spicy fries! Mmmm...

Ingredients
For the Spicy Honey Mustard Dressing
- 1 cup mayonnaise
- 3 tablespoons mustard
- 3 tablespoons honey
- 3 tablespoons vinegar
- 1 tablespoon juice from the jarred jalapenos
- 2-3 tablespoons jarred jalapenos finely chopped
- ½ teaspoon cayenne pepper
For the Southwest Salad Recipe
- 1 package Alexia Onion Rings
- 1 head Iceberg lettuce chopped
- 1 head of Romaine lettuce chopped
- 1 head of red Romaine lettuce chopped
- 2-3 medium carrots shredded
- 1 15 ounce can of corn, drained
- 1 15 ounce can of black beans, drained and rinsed
- ½ - 1 cup shredded Monterey Jack cheese
Instructions
For the Spicy Honey Mustard Dressing
In a medium mixing bowl, combine mayo, mustard, honey, vinegar, and jalapeno juice. Whisk together until smooth and creamy.
Add in chopped jalapenos and cayenne pepper. Stir until combined.
Cover and chill for at least one hour or up to 24 hours to allow flavors to release and combine.
To assemble the salad
Cook Alexia Onion Rings according to package instructions.
In a large bowl combine lettuce, carrots, corn, black beans, and cheese. Toss to combine.
Place individual portions of the lettuce mixture onto serving plates, and top with cooked and slightly cooled onion rings.
Drizzle spicy honey mustard dressing on top, about 2-3 tablespoons for each salad plate.
Serve immediately.
