Perfect Sponge Cake Recipe: Light Fluffy Moist and Tall -... (1)

The perfect sponge cake should be light, fluffy, moist, tall, soft on the edges and of course beautiful. Easy with the right recipe, painfully frustrating with all of the rest. After testing many, many sponge cake recipes my kids got tired of taking sponge cake in their lunch boxes to school. So I gave them a break for a while. When I came back to it I retested the best ones but was still not satisfied, I tried a heap more that instead of using different amounts of the key ingredients used different methods of combining them. Eventually I tweeked a few of the best ones to come up with this light, fluffy and beautifully moist sponge cake recipe. My favorite.

Sponge Cake Recipe Ingredients

2 cups or 320g (11.29 ounces) plain all-purpose flour
1 1/2 cups or 327g (11.53 ounces) sugar
1 Tbsp or 3 tsp baking powder
1 tsp salt
1 1/2 tsp or 7.5g (0.26 ounces) gelatin (powdered)

1/2 cup or 125ml vegetable oil such as canola oil
7 egg yolks or 105g (3.7 ounces)
1 cup or 250millilitres (8.45 fluid ounces) cold water

7 egg whites or 252g (8.89 ounces)
1/2 tsp cream of tartar

To decorate:
1 punnet or 250g (8.82 ounces) or approx 1 2/3 cups strawberries,
600millilitres (20.29 fluid ounces) cream (35% fat),
2 Tbsp icing (powdered) sugar,
1 tsp vanilla essence
(recipe source: adapted from this recipe)

Preheat the oven to 320F (160 degrees Celsius) if using a fan forced oven.

Place your flour, sugar, baking powder, salt and gelatin into a bowl and whisk it to incorporate air and get rid of any lumps.

Make a well in the centre of the flour mixture then pour in the oil, egg yolks and water in that order. Set that bowl to one side.

Put your egg whites and cream of tartar into another bowl and whisk on high speed until you get soft peaks.

Mix together the flour mixture for 30 seconds only or until just combined, don’t over-mix this.

Using a spatula fold in your egg whites in three batches.

Line but do not grease two 20cm (7.87 inches) cake tins and spread the mixture evenly between the two.

Bake in a slow oven, 320F (160 degrees Celsius) for 55-60 minutes.

When it is done leave in the tin and cool upside down.

Made sponge cake using half of the ingredients. Topping is apricot marmelade first (btw thanks a million for this tip), then sliced canned apricots as not yet the season for fresh, covered with whipped sweet cream with vanilla sugar. On top just cream decorations.

enjoy the cake it was surprisingly fluffy and light except for when the toppings and cream on the side of the cake slid off, I did fix this just next time I’ll add a touch more sugar and refrigerate the cream before adding it to the cake, my first ever double cake!
I posted this on my Instagram, thank you so much I hope this helps me with applying for a bakery, may God bless you, Ann.

I made this cake recently for my son in laws birthday. He requested it due to the fact he was raised early in his life in England and his family ate this on a regular basis. It turned out beautiful and tasted amazing! I will definitely be making this again. It was easy and simply delicious. Thank you for perfecting the recipe for us!

    Hi Ann,
Thankyou so much for all your beautiful recipes and advice on all things baking etc! You explain things simply and in a way this home baker can understand.
One of my favourites is your Sponge Cake recipe and wondered if you can advise how to make it coffee flavoured? I can have an educated guess, of course, but am cautious about changing any aspect of your otherwise ‘no fail’ sponge cake recipe so thought I’d check with you first.

    Regards,
    Sarah💐🎂💖

FAQs

What is the secret to light fluffy cakes? ›

The most crucial tip? Instead of buying an entire box of cake flour, simply incorporate two tablespoons of cornstarch into 3 1/2 cups of all-purpose flour. This blocks the formation of gluten in the flour, which produces a lighter, fluffier cake.

What is the secret to a good sponge cake? ›

  2. You want your cake to be pale yellow and fluffy. ...
  3. Cover your tin in baking paper, butter up the sides, top off with butter on the baking paper and bake up wonders, cook. ...
  4. Bake your prepared batter immediately when it is ready.

What is the best flour for fluffy cakes? ›

Use cake flour in recipes where you want an extra-light, extra-fluffy texture, like Angel Food Cake, Cream Cheese Pound Cake, or Buttermilk-Chocolate Cake. You can also use cake flour to bring a more tender crumb to other sweets, like Chocolate Crinkle Cookies.

What makes cake more fluffy, baking soda or baking powder? ›

baking powder: When to use each ingredient to get light and airy baked goods. Baking soda reacts with an acid to cause batters and doughs to rise and spread while baking. Baking powder reacts with liquid and heat to create a light, fluffy texture in baked goods.

Is sponge cake better with oil or butter? ›

The high fat content of butter keeps the sponge moist and tender whilst also providing a delicious buttery flavour that you won't get with margarine or oils.

What is the best sugar for sponge cakes? ›

Because of this caster sugar is generally the most versatile and preferred of the two when baking – its small granules mixes more easily and dissolve more readily when combined with other ingredients giving biscuits, cakes, pastries etc.

How do you make a good rise on a sponge cake? ›

We advise folding the ingredients together, not beating them, as this will keep the mixture aerated. Check your oven is at the correct temperature. If it is too hot, the cake doesn't have time to rise, and if it is too cold it will rise too high and then sink at the end.

Why is my sponge cake not light? ›

Another possible reason is if the cake was over-baked. This generally causes a sponge to become dry but this can then lead to it being dense and heavy. If you baked it for the recommended time it may mean that your oven is running hot and that the baking time needs to be shortened slightly next time you make it.

Why did my sponge cake turn out heavy? ›

Insufficient creaming of sugar and eggs will also make a tight texture because there isn't enough air trapped in the mix to give it a lift. Adding too much liquid will make it dense and pudding like. Genoise sponge will become heavy if the melted butter is too hot when added and if it is not folded in evenly.

Can you leave a sponge cake out overnight? ›

In most cases, yes, leftover cake is perfectly safe to keep overnight [1]. Here's how long it typically lasts: Frosted cakes: These can stay at room temperature for up to 3-4 days if covered properly [3]. Unfrosted cakes: Unfrosted cakes will last for 1-2 days at room temperature [3].

Why are my sponge cakes always flat? ›

Incorporate too little air and your cake won't rise enough. Too much air and your cake will collapse because it simply can't hold onto all that air. Overbeating can add too much additional air and/or large air bubbles which the cake can't support, causing it to collapse in the oven.

Why is my Victoria sponge not light and fluffy? ›

While the cake ingredients should be at room temperature, the butter or baking spread you are using needs to be even warmer but not hot. The butter should be soft but still holding together. If the butter or spread is too soft, it becomes oily and the resulting cake heavy and dense.

Why is my cake dense instead of fluffy? ›

Novice bakers sometimes make the mistake of overbeating the cake batter. If you overbeat the cake batter, it can actually toughen the cake. If the recipe uses measuring dry ingredients by volume, rather than weight, be sure to fluff or sift the flour before measuring. Too much flour will make the cake dense and dry.

What can I add to cake mix to make it lighter? ›

Add More Eggs

For a lighter and more airy cake, use only egg whites (and save the egg yolks for crème brûlée). Remember, taking out the yolks decreases the amount fat in the cake, so make sure to replace it with 1 tablespoon melted butter for every yolk removed.

How can I make my cake more dense? ›

On their own, boxed cake mixes have a structure that's loose and airy. But if you add ¼ cup flour or half a box of instant pudding mix, the texture of the cake becomes denser and tighter, ideal for a pound-cake-like consistency that will hold the shape of a Bundt pan.

Does cake flour make cakes fluffier? ›

Cake flour's lower protein means less gluten is formed as you mix the batter together. Less gluten formation equates to a softer, fluffier texture.
