What You'll Need

Ingredients
  • 2 bone-in center cut pork chops, each about 1 inch think
  • 1/4 teaspoonground cumin
  • 1 teaspoongarlic powder
  • 1/4 teaspoonsalt
  • 1 teaspoonchili powder
  • 1/2 teaspoonsweet or hot paprika
  • 1/2 teaspoondried oregano
  • 1/4 cupdry white wine
  • 1 tablespoonextra virgin olive oil
  • 1 red onion, sliced thin
Directions
  1. Mix all dry spices together, and rub on to pork chops on both sides. Rub in well using your hands. Let the pork chops sit for 10 minutes at room temperature.
  2. In a large saute pan, heat oil for a minute on medium heat. Add sliced onion and saute until translucent, about 5 minutes. Add wine, and cook one more minute.
  3. Move onions over to the side of the pan, and place pork chops in the pan, cooking 5 minutes, then turning, and cooking 5 minutes on the second side.
  4. Remove from heat, then cover the pan, as is, tightly with foil, and let sit for 5 minutes. Plate the pork chops, topping them with the onions, and serve.

I make this a lot! The spice mix works great on all cuts of pork chops. I have used it on thin boneless chops and cooked them in the oven. Sometimes I skip the onions, but it is best as written with thick cut bone in chops.

Delicious, quick and easy. I doubled the spice mix as I had four boneless pork chops. I had to add a little extra white wine while the pork cooked. I served with creamy Parmesan polenta. The sour notes of the onions, worked perfectly with the meat and polenta textures and flavors.

These are so delicious. I threw them on the grill instead of on the stove (start high to sear on both sides and then turn down and cook for about 5 or 6 mins). And sautéed onions with apples on the side. YUM!

We loved this..made it tonight..added mushrooms as well. No wine, so added splash of cider vinegar and splash or wor. sauce. Next time I would add some cayenne--just for some heat, or use smoked paprika as well. cooked onions and mushrooms down to reduce moisture, otherwise, followed recipe, and added back mushroom and onion mix to top of chops before covering. served with sweet potato wedges and fresh broccoli. Just shared the recipe with my sister. Loved it!!

Made this with boneless pork chops (extra cooking time needed), with a side of saffron rice. Being sensitive to some types of heat, I was worried about the spice level on this - but the rub married beautifully and came out flavorful rather than hot. Will return to this recipe again, with bone-in chops next time!

I don't keep wine in my pantry, but I can certainly see trying this with our Honey Wine Vinegar...tender on the meat and sweet on the onions! I think I have some pork in the freezer at home that is calling me!

I added mushrooms to the onions and used boneless pork chops instead because it's what I had. This recipe was perfectly smoky, salty, and sweet from the onions. It also came together in such a short time and made our whole apartment smell divine! It was wonderful!

I actually tried this with only apple cider vinegar, not wine and used boneless pork instead of chops. Used lots of onions because I love them. Very tasty, and the vinegar helped tenderize the meat without leaving a vinegary taste, just spicy and tangy. Love the combination of flavours!

Made this for dinner tonight and it is our new favorite pork recipe. So simple, quick, and delicious. The pork came out juicy and tender and the flavors were perfect. Even my picky little four year old son gobbled it up!
