Right now, it’s prime time strawberry season here in Minnesota. As a matter of fact, we just hit up the local strawberry patch this week and picked buckets delicious berries. There’s just nothing better than fresh from the patch strawberries. They make great Strawberry Scones, Strawberry Lemonade Cake Frosting, and Strawberry Crisp. But one of our favorite recipes is this delicious Healthy Oatmeal Strawberry Bars Recipe I’m sharing with you today!
Healthy Oatmeal Strawberry Bars Recipe
This Healthy Strawberry Oatmeal Bars Recipe is pretty easy to make and a huge favorite in our home. I typically start out with a single batch and end up making a double the second time around! A pan of these healthy oatmeal strawberry bars rarely last more than 2 days here.
Ingredients:
- 1 Cup Rolled Oats
- 3/4 Cup Whole Wheat (or White) Flour
- 1/3 Cup Brown Sugar
- 1/4 Teaspoon Cinnamon
- 1/4 Teaspoon Sea Salt
- 6 Tablespoons Melted Butter (Either salted or unsalted works.)
- 2 Cups Diced Strawberries
- Cornstarch (about 2 teaspoons)
- Lemon Juice (about 2 tablespoons)
- 1/4 Cup Sugar
- White Chocolate OR Glaze
***The white chocolate can be almond bark or white melting chocolate wafers. If you prefer a glaze, use 1/2 cup powdered sugar, 1/2 teaspoon vanilla extract, and 1 tablespoon milk.
Instructions:
- Preheat oven to 375 degrees.
- Line an 8×8 or 11×7 pan with parchment paper.
- In a medium bowl, gently combine rolled oats, flour, brown sugar, cinnamon, and sea salt with a spoon.
- Create a well in the center and slowly pour in melted butter. Then mix until completely incorporated and evenly moistened.
- Press 2/3 of the oatmeal mixture into bottom of prepared pan.
- Spread half the diced strawberries over the crust.
- Top with a thin sprinkle of cornstarch, drizzle of lemon juice, and 1/2 the sugar.
- Repeat with the rest of the strawberries and another thin sprinkle of cornstarch, drizzle of lemon juice, and remaining sugar.
- Top with remaining oatmeal crumble. (You will still see fruit as the crumble topping will NOT cover completely.)
- Bake for 35 to 40 minutes or till fruit is bubbling and crumble topping is toasted and starting to golden.
- Remove from oven.
- Grasp the edges of the parchment paper and transfer these Healthy Oatmeal Strawberry Bars to a wire rack to cool completely.
- Once the bars are cooled, prepare the white chocolate by melting and drizzling over the top of the bars. (***If you prefer the glaze, mix 1/2 cup powdered sugar, 1/2 teaspoon vanilla extract, and 1 tablespoon milk and drizzle over bars.)
- Cut into desired size bars and serve.
So Easy To Make
One of my favorite things about this Strawberry Oatmeal Bars Recipe is the fact that it’s pretty easy to make. There’s a little prep work in cleaning and dicing the strawberries but, overall, it comes together quite quickly. Even better, you make everything in one bowl so there’s fewer dishes! The streusel type topping is also a favorite by all who try this recipe. A cross between a bar and oatmeal strawberry crisp, it’s simply unbeatable!

Notes
*Store leftovers in an airtight container in the refrigerator.
*Double this recipe to make enough for a 9x13 pan.
*Bars can be frozen in an airtight container. (Hold the glaze if freezing and top with that when ready to serve.)
*While fresh strawberries work best, you can use frozen too. Just thaw and pat dry before using.
